    We recently visited the Creminelli family salumificio in Biella, Italy. This is where Cristiano developed his love and passion for salumi before coming to the US. The smell of the aging rooms conjures memories of his childhood in the factory.

    While in pursuit of new foods and flavors, we visited Mercato di Porta Palazzo in Turin, Italy. Chris found these beautiful peppers at the local market. We use similar peppers in a few of our salami recipes.

    We had the opportunity to explore the orchards at Payson Fruit Growers in Payson, UT. Jared was hands-on in understanding their process from seed to the final dried fruit which we put in our snack trays.

    On our hunt to learn more about the history of salumi, we found ourselves at Antica Macelleria Falorni in Tuscany. Ryan was mesmerized by this butcher shop which has been producing high-quality salumi since 1806.
